  15. Patty Ann recruited me. Increasing traffic – lol. I’m pretty sure I got here a few months after H2 started. She said “Hey, I think there are a lot of people you know for old Ace days here … come check it out”.

    I hung out at Ace a lot when it was new, but Protein Wisdom had become my home at that point.

    I hit zone 5 somewhere /not sure and stayed there for 16 minuets.

    Its interesting, though, zone training and how other factors influence it. It was my second workout of the day and I had done hard runs the previous 2 days as well. After the last fast, I walked to get my hear rate down - my HR plummets pretty fast. I got down to 120 and though, ok – I can jog slow now to finish. NOPE. Back up to 150. lol. 

    When I went to bed my Garmin “body battery” was at 7. Out of 100. lol. I guess today is a rest day.

    I seem to recall first wandering in here from Ace’s Home for Wayward Commenters during one of the random downtimes they were prone to at the time. (Blog’s been unusually stable for a while, Pixy’s done a helluva job on that.) Wandered in, saw familiar nics, and just settled in like I’d always been here (much to everyone’s chagrin).

    Hope your cast iron is OK. You got me thinking about it because I use mine enough that I probably take it for granted. I have no qualms about using it if I want to. My sister offered me whatever cast iron that she has, which I’m sure she got from Mom, because she is trying to de-clutter her apartment and doesn’t use it. I immediately said yes, so it’s coming my way this summer from several states away via my wife. I have heard there are people who will fight over the proper way to season cast iron, but I have my method and you will have a hard time convincing me otherwise. If it is properly seasoned, cleaning is almost effortless. And I thought the dishwasher joke was funny.

    I am easily amused.

  48. OK, so it’s not the kind of thing you can add wine or other watery liquid to, to make a pan sauce. That’s a fairly routine thing for me so maybe that’s my problem.

    Acid foods tend to attack cast iron seasoning, so tomatoes, etc. may require a little more immediate cleaning. I don’t know about wine, I make a lot of stews in my Dutch oven and it doesn’t seem to hurt it.

    My super secret recipe for seasoning cast iron is to cook with it, specifically cornbread, using solid shortening (think Crisco in a can or lard). NO liquid oil of any kind. My cornbread recipe calls for oil and cooking spray (I said NO, I melt the solid shortening and use that) and for a cooking temperature of 450F. The recipe starts by me putting a couple of dollops of Crisco in the pan and preheating it in the oven to 450, then pouring the melted shortening into the recipe in place of oil. Both issues resolved. And BTW, a true southerner always uses hot oil in their cornbread.

    If I get a used pan that looks a little funky, I scrape or brush off any really bad stuff, then make a few batches of cornbread in it until it looks and acts right, even if I have to throw the cornbread away. I have done this with numerous skillets, chicken fryers, Dutch ovens, muffin pans and of course, corn stick pans (my favorite). For the bottoms of the pans/ pot, etc. I just take a paper towel and wipe down the exterior with melted shortening before baking.

    I think it is the combination of solid shortening and high baking temperature that makes this work. YMMV.

    I have Wagner, Griswold and several unmarked pieces because I like using them. I do not have any BSR, Valroth or other exotic brands. I am not a collector. By far the highest quality and my favorite piece is an unmarked chicken fryer (looking at you Leon) that I think is a Wagner made for a department store back in the day. It is so light and smooth it’s almost racist.

  73. Watched the FNT review of Fallout and I agree with their take. Goggins is so good I kind of let a lot of the bad slide. Also, my expectations were very low.

  77. I have an old and beloved WagnerWare 9 inch “CHEF SKILLET” that Mom used to use exclusively for corn bread even before I was born in the 70’s. The seasoning was gloriously rich and thick and you couldn’t even see the brand name on the bottom. It popped out perfect cornbread for decades until somehow the seasoning got all screwed up. I never got the full story but Mom was going to throw it away but I said “MINE!”. Eventually I stripped it to bare metal and re-seasoned it a couple-tree times with flaxseed oil. Cornbread still sticks like crazy, and I’d wondered maybe if I’d done it wrong. I think now I just need to do it several more times and just start cooking cornbread. I have some recipe variants I’d like to try that would be noble sacrifices to the cause. Especially ones that use lard. Re-reading Mom’s recipe after Markie’s post makes me realize that I didn’t understand her original recipe entirely and also that she used shortcuts later. It’s supposed to use shortening, but it also calls for butter and she just used that when I saw her make it. I have a fair amount of cornbread in my future.
