Ollie Dog is 2 years old today. His brother from another father was a demon until about two years old and we were hoping for the same with him. My conservative estimate is 10% improvement compared with his maximum assholeishness.
He is a long and lean model of the ACD which makes it super easy for him to reach countertops and dirty dishes in the sink. Yesterday he knocked the butter off the counter and got a good chunk of it before the hammer came down. Like the world’s dumbest criminal he thinks the punishment is worth the reward.

Dorkus wasn’t a garbage can hound for the first few years we had him. Then something changed, and we would start coming home finding trash strewn across the kitchen and had to start putting the rubbish can out on the porch.
He would then poop plastic wrappers and chunks of that absorbent mat the grocery store puts under the raw chicken for a day or two.
So much fun coming home in the evening ready to relax and having to pick up stinkables and mop the floor, instead.
We have a little lock on our garbage drawer. WOrks pretty well. Otto loves both the trash and butter.

Just took a peek at the dough I’ve been cold-proofing in the fridge for a couple days. Had to laugh. It’s the most dough I’ve made in one batch and it’s trying to escape. I put a pizza stone over it and a flat pan and it’s still pushing them up and trying to get out of the bowl. The top pan is pegged to the underside of the next shelf. I might have to put heavy stuff on that shelf.

I made my Thanksgiving chili today and it came out pretty good. I may make some cornbread tomorrow if I can find all the stuff. I read a random recipe on my phone when I bought the corn meal. I know we have corn meal and flour. I think it needed baking powder which may not be in an obvious place where a man would be able to locate it. I better check the recipe again in the morning before Paula leaves for work.
We bought canned cornbread. It’s by the canned biscuits.

We wanted to buy local sourdough buns, but sold out. I want processed cinnamon rolls, but Dan is pushing toast. Processed food FTW. I want to thank the hostage foodies. A woman asked me for clarified butter. Oso: Ghee? Woman “Yes.” Oso “We don’t carry it”
Cornbread Recipe:
1 3/4 cup corn meal
1/4 cup flour (all purpose works for me, but Mom’s note references unbleached self-rising)
1/2 teaspoon baking soda
3 teaspoons baking powder (do not get these two confused)
3/4 teaspoons salt
2 eggs
3/4 cup butter milk (Mom’s note: plus a little more)
1/2 cup water
3 tablespoons butter (Mom’s note: try bacon drippings)
My personal addition: some chopped jalapenos, but nobody in my family likes “spicy” things. Any hint of “mouth burn” is instant turn-off.
Preheat oven to 425 F
Mix all ingredients except butter (or bacon grease) and heat desired fat in cast-iron skillet. Add hot fat to your batter and mix. Pour batter into cast-iron skillet and bake for 25-30 minutes.
I don’t have buttermilk. I’ve heard there’s a way to make buttermilk out of regular milk by putting something in it like vinegar or caviar or butter but I’ll stick with a non buttermilk version.

I saw somewhere that cornbread made with whole ground corn is supposedly so much better than made with store cornmeal. They said the store cornmeal is what is left over after they remove the natural corn oil, etc. from the dry corn grains. When unprocessed with the oils and other stuff left intact, the flavor is phenomenal. Allegedly. I don’t know.
I’ll never have a grain mill, but if you are so inclined by diet, it’s supposed to be great eating.
I might get a grain mill at some point. I really want to try growing rye and barley to turn into ‘shine.
