I put a black cardamom pod (gift from Tushar) in the stock I made from smoked chicken bones last night.
I’m positive that the one pod changed everything into a wonderful exotic ambrosia.
It was stewing all night. Going to go strain and pack it now.

I usually just do six or eight hours to make broth but this time started it about three or four, and simmered it all night, five chicken carcasses in a great big pot, plus giblets and some aromatics.
In the morning, the bones were pretty much disintegrated. No connective tissue left, all melted. The keel cartilages and a lot of the little bones have disappeared too. The broth is a deep gold and smells amazing. After straining, I took a look at the puny solids left over. I could crush the ends of the big leg bones like mush. Pulled the meaty bits out, the intact (but now flavorless) carrots and celery, and the giblets that were still recognizable. That’s all for the dog.
Bubba is having a tremendous morning. And he will have a fine supper tonight too. Honestly, what’s left in the pot has no flavor to it at all. I ladled a little broth over his food for tonight, to enrich it.
As I type, he has still not left the kitchen.

I don’t know if it’s the vinegar, or the length of time. Probably both? I have done overnight stock in the crockpot before, but not starting from 3 pm the previous afternoon. If I had done two pots, one with vinegar, and one without, I could have a better answer for you.
I’ve done overnight stock before, and it didn’t disintegrate the bones like you said, so I’m thinking it’s the acid.

I made some chicken broth from 5 carcases, a sliced yeller onion, a couple of cloves of garlic, a stick of Land O’ Lakes, and a slice of Octamom’s ass cheek that Tushar sent me. It didn’t turn out to good. I may have gone a little heavy on the garlic.
Try smoking a seagull. That’s like a pre-brined turkey.
How big a bird are you smoking? A smaller one won’t dry out, like a 10-12 pounder. You could do 2 if you need more.

IIRC, think the salt actually causes a chemical change in the meat proteins as it cooks and the salt penetrates from outside to inside tissues.

I have a copy of the AA book because I know I drink too much. No matter who you are, there will be stories there that will ring true for you. It’s not only useful for me, but it’s helped me spot dangerous drinking patterns in others.
When I’m going to a place/situation where I used to ‘overindulge’, I make sure to read a few of the stories.
I know it’s totally not what the program is about, but it helps me moderate my drinking.

Alcohol, yeah, it happens. But Coke? Most of the Captains I flew with were too cheap to buy a beer when they could grab one the off the bev cart!
Also, our random drug tests are for DRUGS, not alcohol. It only happened to me 2-3 times, but there was a lady who would meet you in the jetbridge and take you to the ‘special bathroom’. Like I said, it was a drug test.

TiFW, it’s for narcolepsy and “shift work disorder”. It’s used unofficially for maximizing human potential in the work place and schools. Anecdotally I’ve heard reports of special forces using it to remain awake for extended periods of time. I haven’t heard of it for ADD but I’ll look into it.
The shift work thing is the reason a freind of mine takes it. He’s on night shifts as an X-ray / CT tech and works one day 7-3 as an instructor for X-ray tech students. Provigil helps him do that, one dose, once a week.

Wife prefers temperature that will save money. She thinks I like extreme temperatures and that I inexplicably like it hot in winter and cold in summer. She touts that her ‘moderate’ way is better.
In reality, I like it to be 70-72 year round. She prefers 65 in winter and 80 in summer.
I like 65 in winter and summer. I was getting it to 54 before Dan started shutting windows on me.
I’d do well in 70-72 year-round. It’s the perfect temp.
I had my hotel room at 62. Best sleep evah.
Anita gets up 2 hours before me. She comes into the computer room and starts the space heater, also starts the pilot-light on the gas-log in the front-room.
When she gets-up, I start getting cold. She’s a GREAT heater.
When I get cold enough, I get-up, wander into the front-room and turn on the gas-log, take some ibuprofin, and go into the computer-room to start my machine.
The computer-room is at 70 and the house is at 64.
After a couple hours, it evens out.

When we go to AZ, my cousins keep the AC at 70!!!! Augh!!! Why bother? 2 of my former BiLs were surveyors in TX. They would keep the AC at 70 too. Blah blah 30+degree differential blah blah

In similar news, I finally figured out after two Winters with a sore neck, that memory foam pillows are for warm times, and need to be retired during Northeastern Winters. Switch to a traditional pillow for Winter, up here.
